Vlaskaas Salad with Toasted Pecans

Ingredients (for 4 persons)
- 7 oz. sliced Beemster Vlaskaas
- 3 ½ oz. spinach leaves, arugula or radicchio
- 5 tablespoons olive oil
- 2 tablespoons walnut oil
- 1 tablespoon lemon juice
- freshly ground black pepper
- 1/2 teaspoon Tabasco
- pinch of paprika
- 1 tablespoon Worcestershire sauce
- 3 ½ oz. shelled pecans
- 3 ½ oz. dry-cured ham

Preparation
Slice the cheese in wide strips. Divide the spinach (or arugula or radicchio) between 4 plates. Mix 3 tablespoons of olive oil with the walnut oil, lemon juice and black pepper to taste and sprinkle the dressing over the greens. Mix the rest of the olive oil with the Tabasco, paprika and Worcestershire sauce; toss the nuts in the mixture. Toast the nuts in a hot frying pan. Fold or roll the cheese strips and arrange them, along with the pieces of ham, on the salads. Top with the toasted pecans.
TIP
• Substitute Beemster Vlaskaas with Beemster X-O- or Beemster Classic.
• Add sliced mango or avocado to the salad.
