Spicy Tomato Soup Au Gratin

Ingredients (for 4 persons)
  • 5 ounces Beemster Classic, grated
  • 2 tablespoons olive oil
  • 125 g chorizo, in strips
  • 2 shallots, chopped
  • 1 garlic clove, minced
  • 1/3 cup tomato paste
  • Pinch of cayenne pepper
  • 4 cups meat broth
  • 2 beefsteak tomatoes, peeled and cubed
  • 2 tablespoons parsley, chopped
  • 1 whole wheat baguette, sliced

Heat 1 tablespoon olive oil in a stock pan and sauté the chorizo, shallots and garlic. Stir in the tomato paste and cayenne pepper and sauté for another minute.
Add the broth and the chopped tomatoes and simmer for 10 minutes. Stir in the parsley. Drizzle the rest of the olive oil on four baguette slices and sprinkle with cheese. Pour the soup into the bowls. Top with the cheese bread slices and place the bowls on a cookie sheet in the oven under a hot broiler until the cheese is melted. Serve the rest of the sliced baguette on the side.

TIP: Instead of chorizo, try salami. You may substitute the tomato paste with a cup of tomato puree and 2 1/2 cups meat broth.
