Pizza Primavera With Beemster 2% Milk Tomato Salad

Ingredients (for 2 persons)
- 300 g (1 1/3 cups) white bread mix
- 200 ml (6.75 oz, or 3/4 cup plus 1.5 tbsp) buttermilk
- Olive oil
- Salt
- Piece of Beemster 2% Milk
- 2 cloves garlic, crushed
- Black pepper
- Nutmeg
- 1 punnet (1 quart) of cherry tomatoes
- 50 grams (1 3/4 oz) fresh spinach, cleaned and sorted
- 1 bunch of fresh basil, stalks discarded

Preparation
Make a bread dough using the white bread mix, buttermilk, 1 tablespoon olive oil and a pinch of salt, and let it rise for 15 minutes. Grate 150 grams (5.5 oz, or 1/2 cup plus 3 tbsp) Beemster 2% Milk, and shave another 50 grams (1 3/4 oz). Preheat the oven to 240°C or 450°F (very hot). Divide the dough into two pieces, and roll each into a disc. Brush the pizza bases with garlic puree and olive oil, sprinkle with grated BeemsterLite and season with salt, pepper and nutmeg. Place on a baking sheet, and bake the pizzas in the oven for 8-10 minutes, until golden brown. Cut some of the cherry tomatoes into quarters and some into halves. Mix these with the spinach, basil and shaved Beemster 2% Milk. Take the pizza out of the oven, arrange the salad on top, and serve immediately.
