Pasta Salad With Mange-Tout (Snow Peas) And Beemster Classic

Easy, Salad, light lunch
Ingredients (for 2 persons)
- 300 g (12 oz) penne pasta
- 300 g (12 oz) mange-tout (snow peas)
- Ca. 50 g (4 tbsp) flaked almonds
- 1 red chilli
- 12 basil leaves
- 200 g (7 oz, or 3/4 cup plus 2 tbsp) Beemster Classic
- 100 ml (6 3/4 tbsp) Caesar dressing

Put the pasta in the pan. Boil 1½ - 2 litres (1.75 to 2.25 quarts) of water, pour it on top of the pasta, stir, and return to a boil. Cook the pasta until al dente. String the mange-tout (snow peas) and add to the pasta 5 minutes before it is done. Drain the pasta and mange-tout in a colander and rinse with cold water. In a dry frying pan, toast the flaked almonds, shaking occasionally, until golden-brown, about 5 minutes. Cool on a piece of parchment paper. Halve the chilli, remove the seeds and the membranes, and cut half of it into narrow strips. Stack the basil leaves and cut to shreds. Cut the Beemster Classic into thick strips. Toss the pasta and mange-tout with the Caesar dressing, adding the almonds, chilli, basil and Beemster in at the last moment.
