Farmers' Choice Crepe-Pie With Honey-Ginger Syrup

Ingredients (for persons)
  • 7 ounces Beemster Farmers' Choice, sliced
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 eggs
  • Salt
  • 2 tablespoons melted butter or liquid margarine
  • 2 tablespoons honey
  • 2 tablespoons ginger pieces in ginger syrup

Preparation

Preheat the oven to 400°F.
Beat the flour, milk, eggs and salt into a smooth batter. Heat the butter in a frying pan and use the batter to make at least 8 crepes, about 1/4 cup at a time. Layer the crepes with the slices of cheese, making a stack.
Place the stack on a cookie sheet or a baking dish and bake 10-15 minutes until the cheese is melted.
Mix the honey with the ginger (cut into smaller pieces if necessary) and the ginger syrup. Use a sharp knife to slice the cheese crepe-pie into pieces and drizzle with the honey-ginger syrup.

TIP: Try adding chopped walnuts or pecans to the honey.
