BLT - Beemster Lettuce and Tomato - Sandwich (vegetarian)

Ingredients (for 2 persons)
  • 3 ½ oz. sliced Beemster Farmers’ Choice
  • 4 slices of cornmeal or whole wheat bread
  • 2 tablespoons mayonnaise or low-fat cream cheese
  • 1 tablespoon chili sauce or spicy ketchup
  • Lettuce leaves or arugula
  • 2 tomatoes, thinly sliced
Materials
  • 4 tooth picks
Preparation

Combine the mayonnaise (or low-fat cream cheese) with the chili sauce (or spicy ketchup). Arrange the bread slices on a work surface and spread with the mixture. Divide the lettuce (or arugula) between two of the pieces of bread.
Add the sliced Beemster Farmers’ Choice and top with tomato slices. To assemble each sandwich, cover with one of the remaining two pieces of bread, spread side down.
Slice each sandwich diagonally and use tooth picks to hold the halves together.

TIP
• Substitute Beemster Farmers' Choice with Beemster X-O- or Beemster 2 Percent Milk.
• Add strips of crispy bacon or slices of Canadian bacon for a non-vegetarian version of the BLT.
