Beemster X-O- Reuben Sandwich

Ingredients (for 2 persons)
- 4 1/3 oz. sliced Beemster X-O-
- 1 tablespoon peanut oil
- 1 onion, sliced in rings
- 4 slices of rye or coarse whole wheat bread
- 2 tablespoons Thousand Island or Russian dressing
- 4 tablespoons (1/3 cup) sauerkraut, drained
- 8 pastrami slices
Materials
- A panini grill or covered frying pan
Preparation
Heat the oil and fry the sliced onion for 5 minutes until golden brown. Arrange the bread slices on a work surface. Spread two of the slices with the dressing. Divide the onions, sauerkraut, pastrami and cheese between two of the slices and cover each with one of the remaining slices of bread. Toast the sandwiches in a panini grill or use covered frying pan until the cheese is slightly melted. Slice the sandwiches diagonally and serve. Dill pickles on the side make a great addition.
TIP:
• Substitute Beemster X-O- with Beemster Classic, Vlaskaas or Beemster Farmers’ Choice.
• Instead of pastrami, try corned beef or smoked or fried chicken breast, and replace the Thousand dressing with mustard.
