Beemster X-O- Cheese Salad With Chicken and Apricots

Ingredients (for 4 persons)
- 14 oz. Beemster X-O- sliced thin
- 3 ½ oz. dried apricots
- 9 oz. sliced smoked chicken breast
- 2 stalks of celery, thinly sliced crosswise
- 2 spring onions, thinly sliced in rings
- 7 oz. low-fat yoghurt or sour cream
- 1 tablespoon honey
- Pinch of mustard
- Freshly ground black pepper
Materials
Preparation
Divide the cheese and chicken between 4 plates. Soak the apricots in hot water or tea. Sprinkle the chopped celery and spring onion over the plates of cheese and chicken. Drain the apricots (and slice in half, if desired). Place on top of the chicken or around the outside. For the dressing, mix the yoghurt (or sour cream) with the honey, mustard and black pepper and serve on the side.
TIP
• Substitute Beemster X-O- with Beemster Classic, Beemster 2 Percent Milk or Beemster Vlaskaas.
• Instead of chicken, use ham or turkey.
