Beemster Panini With Roasted Red Bell Pepper And Zucchini

Ingredients (for 2 persons)
  • 5 ounces Beemster Classic
  • 1 garlic clove, minced
  • 1 tablespoon dried Italian herbs
  • 2-3 tablespoons olive oil
  • 1 red bell pepper
  • 1 small zucchini
  • 1 baguette or focaccia
Materials
  • grill pan
  • grilled cheese maker
Preparation

Mix the garlic and herbs with the olive oil.
Slice the red bell pepper into 8 wide strips and slice the zucchini diagonally into long slices. Brush the pepper and zucchini with olive oil and roast on a hot grill until they are soft and golden brown. (If you do not have a grill, brush them with olive oil, wrap in tin foil and roast in your oven at 400 degrees Fahrenheit, until soft and golden brown.)
Slice the cheese. Cut the baguette into four equal pieces and cut these open lengthwise. Take the bottoms and layer them with half of the cheese, the peppers and the zucchini and top with the rest of the cheese. Put the tops back on, press the panini together firmly, and toast them in a grilled cheese maker for 6-8 minutes until they are done and golden brown.

TIP: Beemster Garlic or Beemster Mustard also taste great in this panini.
