Beemster Farmers' Choice Wraps with Corn and Roast Beef

Ingredients (for 4 persons)
  • 4 1/3 oz. sliced Beemster Farmers’ Choice
  • 4 flour tortillas, size 10”
  • 6 tablespoons tomato ketchup
  • 4 large or 8 small slices of roast beef
  • 2 tablespoons olive oil
  • 1 red onion, chopped
  • 7 oz. sweet corn (can), drained
Materials
  • baking dish or baking sheet, greased
Preparation

Pre-heat the oven to 400°F or use the broiler. Arrange the tortillas on a work surface and spread with the tomato ketchup. Divide half of the cheese slices between the tortillas and top with the sliced roast beef. Heat the olive oil and fry the onion for 3 minutes. Stir in the sweet corn. Divide the corn and onion mixture between the tortillas and roll them up. Place them, seam down, in the baking dish or on the baking sheet. Cover with the rest of the cheese and place the baking dish or sheet in the middle of the oven or underneath the hot broiler and bake for approximately 10 minutes until the cheese is slightly melted.

TIP
• Substitute Beemster Farmers’ Choice with Beemster Classic or Beemster Vlaskaas.
• Use ham instead of roast beef, and add chopped tomato to the sweet corn.
