Beemster Farmers' Choice Club Sandwich with Salmon and Tomato

Ingredients (for 2 persons)
  • 3 ½ oz. sliced Beemster Farmers' Choice
  • 6 slices of cornmeal or white bread, lightly toasted
  • 3 tablespoons low-fat or regular mayonnaise
  • 1 tablespoon (spicy) tomato ketchup
  • Several leaves of iceberg lettuce or radicchio, remove slices
  • 1 beefsteak tomato, sliced thinly
  • 3 ½ oz. smoked salmon
  • freshly ground black pepper
Materials
  • 4 tooth picks
Preparation

Combine the mayonnaise and ketchup and spread mixture on the bread. Arrange the lettuce and cheese on two of the slices of bread. Top with two slices of salmon and tomato; sprinkle with freshly ground black pepper. To assemble each sandwich, cover with one of the remaining two pieces of bread, spread side down. Slice each sandwich diagonally and use tooth picks to hold the halves together.

TIP
• Substitute Beemster 2 Percent Milk with Beemster Farmers’ Choice or Beemster Vlaskaas.
• Instead of salmon, use roasted or smoked chicken breast.
