Beemster Classic Tuna Melt

Ingredients (for 2 persons)
- 3 ½ oz. sliced Beemster Classic
- 2 slices of sourdough or multi-grain bread, cut ½ inch thick and lightly toasted
- 2 tablespoons mayonnaise with lemon, with freshly ground pepper to taste, OR
- 2 tablespoons sour cream, with freshly ground pepper to taste
- 1 avocado, peeled, pitted, and cut into thin slices
- 1 can of tuna in water (approximately 6 oz.), drained
- 1 tablespoon chopped parsley or chives
- 1 large tomato, sliced thin

Preparation
Preheat the oven to broil. Place the bread slices on a baking sheet. Spread the bread with the lemon mayonnaise or sour cream and top with the tomato and avocado slices. Add the tuna (breaking it into smaller pieces if desired) and cover with the slices of Beemster Classic. Place the baking sheet under the broiler and bake until the cheese has melted (3 minutes). Top with chopped parsley or chives.
TIP
• Substitute Beemster Classic with Farmers’ Choice or Beemster 2 Percent Milk
• Try crab instead of tuna, and garnish with tarragon instead of parsley or chives
