Beemster Classic Cheese Pie With Broccoli And Cashews

Ingredients (for 4 persons)
- 4 ounces Beemster Classic, sliced
- 2 cups broccoli, in small florets
- 6 sheets of frozen pastry dough, thawed
- breadcrumbs
- 2 pears, thinly sliced
- ½ cup unsalted cashews, coarsely chopped
- 4 eggs
- freshly ground salt and pepper
- 1 cup single (whipping) or heavy cream
Materials
- pie pan Ø 9 – 10 inches
- baking parchment or oil to grease
Preparation
Preheat the oven to 400 °F.
Cook the broccoli florets for 4 minutes (or in the microwave, covered, for 2 minutes at 800 Watts/high setting).
Drain the broccoli and rinse with cold water. Either line the pie pan with baking parchment or grease the pan. Place the dough in the pan and pinch the edges shut using thumb and index finger.
Sprinkle the crust with breadcrumbs and arrange the pear slices. Place the broccoli florets and nuts on top of the pears. Beat the eggs with pepper, salt and cream.
Pour the egg mixture over the pie filling and top with the cheese slices.
Bake the pie in the middle of the oven for 35-40 minutes until golden brown.
TIP: Substitute Beemster Classic with Beemster Garlic.
To shorten cooking time, bake the pie in a combination oven at 350 Watt, 425°F for about 20 minutes.
