Beemster Cheese Pie with Broccoli and Cashews

Ingredients (for 4 persons)
- 4 ounces Beemster Classic, sliced
- 3 cups broccoli, in small florets and blanched
- 9 sheets of frozen pastry dough, thawed
- breadcrumbs
- ½ cup unsalted cashews, coarsely chopped
- 4 eggs
- freshly ground salt and pepper
- 1 cup heavy cream

Preparation
Preheat the oven to 400°F.
Line a 9-inch pie pan with baking parchment. Place 6 sheets of pastry dough in the pan and pinch the edges shut using thumb and index finger.
Sprinkle the crust with breadcrumbs. Place the broccoli florets and nuts on top of the breadcrumbs. Beat the eggs with pepper, salt and heavy cream.
Pour the egg and cream mixture over the pie filling and top with the cheese slices. Place 3 sheets of pastry dough on top of the filling. Seal the edges, and cut vents in the top.
Bake the pie in the middle of the oven for 35-40 minutes until golden brown.
