Beemster 2% Milk Roasted Bell Pepper Roll-ups

Ingredients (for 8 persons)
  • 7 ounces Beemster 2% Milk
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 tablespoons capers

Preparation

 Preheat the oven to 450 °F. Cut the peppers in half lengthwise, remove the seeds and pith, and place on a cookie sheet, skin side up, in the oven. The skin will start to blacken and soften in about 10 minutes. Remove the peppers from the oven and immediately transfer them to a bowl and leave covered for 10 minutes. The skins should peel right off. Place the pepper strips on a paper towel to drain. Slice the cheese thinly and divide between the pepper strips. Sprinkle the capers on top and roll the pepper-cheese slices. Secure with a cocktail toothpick and arrange on a platter.

TIP: For variation, try Beemster cheese and eggplant roll-ups: Cut an eggplant in half and slice lengthwise into strips, brush with olive oil and roast on a hot grill pan until golden brown and done.
Allow the eggplant to cool. Top with cheese slices, sprinkle with finely chopped parsley and roll up tightly. Secure with cocktail toothpicks.
